Tropical Summer Sips: Skinny Watermelon Margaritas


When I think about watermelon, I’m always reminded of my friend, Ron. He called watermelon “watalemon” (you've gotta say it with a Jamaican-British accent, ok). Once, we were camping in the Keys, and we cut up a watermelon, but the entire tray of it fell in the sand. We had no fresh water except for small bottles, and we weren't willing to spare them. But Ron wasn't about to give up on the watalemon. He scooped them up, washed the sand off in the ocean, and we all happily ate salty-sweet watermelon under the shade of the mangroves. This recipe is a taste of that day in our Floridian summer.
INGREDIENTS
  • 2 teaspoons sea salt
  • 1 lime wedge
  • 3 1/2 cups cubed seeded watermelon
  • 1/2 cup tequila (I prefer Cazadores brand)
  • 2 tablespoons sugar
  • 3 tablespoons fresh lime juice
  • 1 tablespoon Triple Sec (or other orange-flavored liqueur)


DIRECTIONS1. Place 2 teaspoons sea salt in a saucer. Rub the rims of 6 glasses with lime wedge; submerge rim of each glass in sea salt to coat. Set glasses aside.
2. Combine watermelon and next 4 ingredients in a blender; process until smooth. 
3. Fill each prepared glass with 1/2 cup crushed ice. Add 1/2 cup margarita to each glass. Garnish with lime or watermelon wedges.
Makes 6 servings – 96 calories per serving.
